At the top of the Cotswolds, Cotswold Distillery is actually a whiskey distillery focusing on single malt whiskey.

All barley is locally grown in the Cotswolds and selected for whiskey production.  All unused material is sold on to other local farmers for use elsewhere minimising waste.

Second hand barrels are brought in for the maturation process with some of the older bottles now selling for £3,000+ but most at a more reasonable price, available direct from them here.

To enable the distillery to make some sales in the 3 years and 1 day it takes to produce a whiskey, they also make gin using locally sourced lavender to form part of their botanicals.

Tour was really good and the café is a perfect spot in the sunshine.
